PDO UMBRIA (Hills of Assisi-Spoleto)
PDO certification, from Ministry of Agricultural Policies guarantees the compliance of the product with the rules, namely: Olives originated from the indicated zone, with varieties and proportions provided for (Moraiolo not less than 60%, Leccino and/or Frantoio not more than 30%, other varieties not more than 30%). Colour from green to yellow, strong fruity smell, taste fruity with a strong bitter and hot sensation. Maximum acidity 0.65%, peroxide number less than or equal to 12, oleic acid less than or equal to 82%, total polyphenol content greater than or equal to 150 ppm.
