Olive Oil is a produce of the land. For this reason, taste and quality change according to the zone of olive production. Like for wine, many factors determine oil’s taste and value: climate, cultivar, ground, processing…it is not easy for the average individual to discern. That is why PDO, Virgin and Extra Virgin Olive Oils’ protected designation of origin, has been created.
PDO enhances the typical and traditional characteristics of the areas the olives orgin, and it guarantees the final product quality even concerning colour, smell and taste.
Umbria is still today the only region in Italy having the denomination PDO covering a whole regional oil production.
PDO “Umbria” was been established in 1998 and consists of five separate sub-areas of production according to the different olive varieties with botanical diversification for each area:
1) Hills of Assisi-Spoleto
2) Martani Hills
3) Trasimeno Hills
4) Orvieto Hills
5) Amerini Hills
